Rasawala kala chana nu shaak is a popular gujarti curry recipe. a healthy curry recipe prepared mainly with black chickpeas or also known as desi chickpeas. It is a mildly sweet tangy and spicy gravy-based curry recipe. It is simple to prepare and can be served with gujarati kadhi and roti. It is loved by all kinds of age groups. Ingredients
To pressure cook chana
- 1 cup black chana
- 3 cup water
- Salt to taste
For masla paste
- ยฝ tsp kashmiri red chilli powder
- 1.5 tsp coriander powder
- ยผ tsp turmeric powder
- 1 tsp dry mango powder
- ยฝ tsp cumin powder
For tomato-onion gravy
- 2 medium size onions
- 1 inch ginger
- 5-6 garlic cloves
- 2 medium size tomatoes
For kala chana masala
- 4 tbsp oil
- 1 tsp cumin seeds
- 1 dry red chilli
- 3 cloves
- 1 bay leaf
- ยฝ inch cinnamon
- Pinch of hing
- Masala paste
- Tomato onion gravy
- Salt to taste
- 2 green chilli slits
- Boiled chana with water
- ยฝ tsp garam masala
- 1 tsp tamarind paste
- 1 tbsp jaggery
For tadka
- 2 tbsp ghee
- ยฝ tsp kashmiri red chilli powder
Instructions
- In a pressure cooker, add soaked chana, water, and salt. Close the lid and cook chana on a medium flame for 5-6 whistles.
- Now in a mixing bowl, add red chilli powder, coriander powder, turmeric powder, dry mango powder and cumin powder. Add some water and make the masala paste.
- In a mixture jar, add onion, garlic, ginger and tomatoes. Grind it into a smooth paste.
- Now heat oil in a pan, add cumin seed, dry red chilli, cloves, bay leaf, cinnamon, and a pinch of hing. Sautรฉ for a minute.
- Then add gram flour and roast till it slightly changes its color.
- Add salt and green chilli slit. Mix well.
- Add masala paste and roast till it oil separates from it. then add onion-tomato gravy and cover and cook till oil is released from the sides of the gravy.
- Then add boiled chana with water and mix well.
- Cover and cook for 4-5 till the gravy thickens.
- Add garam masala, tamarind paste and jaggery. Mix well.
- Now heat ghee in a pan and add red chilli powder. Mix well and add tadka on rasawala chana masala. mix well.
- Serve rasawala chana nu shaak with gujarati kadhi and rice.
Notes
- masala paste gives dhaba style color and flavor to chana shaak
- dry spices give a nice aromatic flavor to chana.
- roasted besan gives thickness to chana shaak.
- ghee tadka add more flavor and taste of chana shaak.
