Lili tuvar dhokli nu shak is a traditional Gujarati sabzi made using fresh pigeon peas, dhokli and regular Indian spices. dhokli is Spiced wheat and Gram flours dumplings added with green tuvar shak to make it delicious and nutritious at the same time. It is frequently made during winter when pigeon pea is easily available in the market. It is a very quick and easy-to-make recipe. Ingredients
For dhokli
- ยฝ cup wheat flour
- 2 tbsp besan
- Salt to taste
- ยผ tsp carom seeds - ajwain
- 1 tsp white sesame seeds
- ยผ tsp hing
- ยผ tsp sugar
- 1 tsp green chilli paste
- ยฝ tsp ginger paste
- 1 tbsp curd
- ยผ cup chopped methi leaves
- ยผ cup chopped palak leaves
- 1.5 tbsp oil
- 3 tbsp water
For green paste
- ยผ cup green garlic - white part
- ยฝ cup green onion
- ยฝ cup chopped coriander leaves
- 3 green chilli
- 1 inch ginger
- 3 tbsp peanuts
- 2 tbsp white sesame seeds
- Salt to taste
- Water to grind paste
For lili tuvar dhokli nu shak
- 250 g or 1.5 cup lili tuvar - frensh green pigeon peas
- 4 tbsp oil
- 1 tsp cumin seeds
- ยฝ tsp ajwain
- 1.5 cup tuvar dana
- Salt to taste
- ยผ tsp turmeric powder
- Pinch of baking soda
- Green paste
- 2 cup water
- Prepared dhokli
- 1 tbsp jaggery
- ยผ tsp garam masala
- ยผ cup chopped coriander leaves
- ยผ cup chopped green garlic - green part
- 1 tbsp lemon juice
Instructions
Making dhokli
- In a mixing bowl, add wheat flour, gram flour, salt, ajwain, white sesame seeds, hing, sugar, green chilli paste, ginger paste, curd, chopped methi leaves, chopped palak leaves, and oil. Add the required water and knead the semi-soft dough.
- Make small size balls from the dough.
- Flatten each ball on your palm and make a depression in the center by pressing with your thumb. Similar way makes all the dhoklis and keep aside.
Making tuvar dhokli nu shak
- In a mixture jar, add green garlic, green onion, coriander leaves, green chilli, ginger, peanuts, sesame seed, salt and required water. Grind into a smooth paste. Keep it aside.
- Heat oil in a cooker, add cumin seeds and ajwain. Sautรฉ for a minute.
- Add fresh tuvar dana, salt, turmeric powder and a pinch of baking soda. Sautรฉ dana for 2-3 minutes.
- Now add the green masala paste and mix well. Sautรฉ masala till oil is separated from its sides.
- Add 2 cup water and allow the mixture to boil.
- When the gravy starts boiling, add all prepared dhokli and mix well.
- Cover the lid and Pressure cook for 2 whistles on medium heat.
- When cool down completely, open the cooker and add jaggary, garam masala, chopped coriander leaves and chopped green part of garlic. Mix well.
- Switch off the gas and add lemon juice. Mix well.
- Serve lili tuvar dhokli nu shaak with roti or rice-dal
Notes
For dhokli
- curd gives softness to dhokli.
- knead the semi-soft dough for dhokli.
- make a medium-thick dhokli.
- cook gravy till oil separates.
- when gravy comes to a boil, then add dhokli.
- cook tuvar ni dhokli nu shaak on a medium flame for 2 whistles.
- jaggery gives a nice flavor to shaak.
