Kathiywadi bharelo rotlo is a stuffed rotlo made with bajra flour and spicy methi-green garlic-onion stuffing. I also share the masala chilli recipe which tastes great with stuffed rotlo. It is usually made for breakfast and sometimes lunch and dinner also.
Generally stuffed rotla recipe varies from house to house. But I share very basic recipe in which I roast methi, green garlic, and onion with spices and stuffed them into bajri dough. In my recipe, I share a few tips and the easiest way to make stuffed rotla. The best part of the recipe is that this no-fuss recipe is made with ingredients that you are sure to have at home. Do try this!
- Firstly, I made rotla stuffing with methi leaves, green garlic onion, and regular spices. You can add different vegetables and spices according to your choice.
- Also, rotla dough should be soft and smooth, do not knead tight dough also I made rotla by tapping it by hand. beginners can find it difficult with bare hands and I recommend making it with a rolling pin.
- bharelo rotlo has to be thick as compared to normalย rotlo. if you roll it thin, it may start to have cracks and disintegrate.
- lastly, cook rotla on medium flame, also sprinkle some water on top of the raw rotla once it is transferred to tawa. moisture would help rotis to turn soft and fluffy.

Ingredients
For bharelo rotlo
- 2 cup bajra flour
- Salt to taste
- 1 cup water or as required
- Ghee for serving
For stuffing
- 2 tbsp ghee
- 1 tsp cumin seeds
- 1 tbsp sesame seeds
- Pinch of hing
- 4-5 spicy green chilli paste
- 1 tsp ginger paste
- ยผ cup white part of green garlic
- ยผ cup white part of green onion
- ยผ tsp turmeric powder
- Salt to taste
- ยฝ cup chopped methi leaves
- ยผ cup green part of green garlic
- ยผ cup green part of green onion
- ยฝ cup chopped coriander leaves
For masala chilli
- 250 grm green and red chilli
- 4-6 tbsp roasted gram flour
- Salt to taste
- Pinch of hing
- ยฝ tsp ajwain
- ยผ tsp turmeric powder
- ยฝ tsp coriander powder
- ยฝ tsp Kashmiri red chilli powder
- ยผ tsp garam masala
- 1 tsp powder sugar
- ยฝ lemon juice
- 1 tsp oil
- 4 tbsp oil
Instructions
Making bharelo rotlo
- In a pan, add ghee, cumin seeds, sesame seeds, hing, green chilli paste and ginger paste. Sautรฉ it.
- Then add white part of green garlic, onion, turmeric powder and salt. Saute till it become slightly soft.
- Now add chopped methi leaves, green part of garlic and onion. Saute it.
- Switch off gas and add coriander leaves. Mix well. Stuffing is ready.
- Now in a mixing bowl, add water and salt. Mix well.
- Then add bajra flour gradually and knead soft dough.
- Now sprinkle some water and knead dough for 2-3 minutes till it become smooth.
- take a medium size ball and flatten it out between your palm. Add 2 tbsp stuffing into the center of the circle.
- Bring edges of the circle towards the center and fold over to cover the entire filling; making sure the edges are all sealed well by pinching them together if there is any opening.
- Flatten the stuffed dough; dust over a little flour and pat gently into a 6-inch diameter circle taking care not to put too much pressure as the stuffing can come out of the dough.
- Heat tawa on medium flame, then stuffed rotla onto the tawa to cook until golden brown on both sides.
- Serve the kathiyawadi bharelo rotlo hot with ghee smeared on the top.
Masala chilli
- Wash and cut green chilli into two parts. Remove its seed and keep it aside.
- Now in a mixing bowl, add roasted gram flour, salt, hing, ajwain, turmeric powder, coriander powder, Kashmiri red chilli powder, garam masala, powder sugar, lemon juice, oil, and some coriander leaves. Mix well. Masala is ready.
- Heat oil in a pan, add chillies, and fry it on medium flame.
- Sprinkle masala and some water on the fried chillies. Do not stir it and cook it for 2-3 minutes on low flame, so the masala flavor is absorbed. (refer to video)
- Mix well. Masala chilli is ready.
Notes
- Stuffing tastes great with ghee. You can use oil instead of it.
- The green part of garlic and onion requires very less time to cook.
- Knead the soft dough for rotla.
- Sprinkle little water drop and knead bajra dough till it becomes smooth and crack-free.
- Cook rotla on medium flame.
- Fry chillies on medium-high flame.
- Sprinkle masala on fried chillies, do not stir it so the masala flavour absorbs into chillies.
