Ingredients
 

For kathiyawadi garlic chutney

  • 5-6 garlic cloves
  • 1 tsp red chilli powder
  • ยฝ tsp cumin seeds
  • Pinch of salt

For dhokli batter

  • 1 cup Gram flour - besan
  • 1 cup buttermilk
  • 1 cup water
  • 2 green chilli
  • 1 inch ginger
  • Salt to taste
  • Pinch of hing
  • ยผ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder

For Guvar dhokli nu shaak

  • 500 grm guvar - cluster beans
  • 6 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp ajwain
  • Pinch of hing
  • Some curry leaves
  • 2 chopped green chilli
  • 1 tsp ginger paste
  • ยพ cup tomato puree
  • Salt to taste
  • ยฝ tsp turmeric powder
  • 2 tbsp coriander powder
  • 1 tbsp red chilli powder
  • 1 tsp garam masala
  • ยฝ tsp sugar - optional
  • 2 cup hot water or as required
  • Prepared dhokli
  • 1 tsp lemon juice
  • Some coriander leaves

Instructions

  • In a pressure cooker, add 6 tbsp oil, 1 tsp mustard seeds, 1 tsp ajwain, pinch of hing, some curry leaves, 2 chopped green chilli and ginger paste. Sautรฉ it.
  • Now in mortal-pestal, add 7-8 garlic cloves, 1 tbsp red chilli powder and pinch of salt. crush it and add garlic chutney into pressure cooker and sautรฉ it.
  • Now lower the flame, in a bowl, take some water, add ยฝ tsp turmeric powder, 2 tbsp coriander powder, 1 tbsp red chilli powder, 1 tsp garam masala and ยฝ tsp sugar. Mix well, masala paste is ready.
  • Add masala paste into oil and saute till oil separate from its sides.
  • Now add 500 grm medium size cut guvar and saute it for 2-3 minutes.
  • Then add 2 cup hot water and bring it to boil.
  • Meanwhile, In a mixture jar, add 1 cup besan, 1 cup buttermilk, 1 cup water, 2 chopped green chilli, 1 inch ginger, salt, ยผ tsp turmeric powder, pinch of hing, 1 tsp red chilli powder and 1 tsp coriander powder.
  • Grind it into smooth paste.
  • Add grinded mixture into bowl, and place a bowl into pressure cooker. cover the bowl with steel plate.
  • Then cover the lid and pressure cook batter on high flame for 5 whistle.
  • Switch off gas and release pressure cooker temperature naturally. Do not cool it for longer time.
  • Then open lid and take out bowl from cooker and whisk hot and cooked batter for 1-2 minutes in one direction.
  • Batter become smooth and then sprad little batter on plate and roll it. If batter is properly rolled than pour hot batter into grease plate.
  • Cool down completely and cut into small square.
  • Dhokli is ready. Keep it aside.
  • Now add ยฝ cup hot water into pressure cooker and bring it to boil.
  • Add dhokli into it and cook it for 5 minutes.
  • Now add lemon juice and coriander leaves. Mix well.
  • Guvar dhokli nu shak is ready to serve with roti or steam rice.
