Bhel is a spicy and tangy snack, perfect for summer afternoons. In this recipe, I have prepared a market-style bhel mix namkeen, which is easy to make and has a good shelf life. I have also made a special green chutney for the bhel. With the bhel mix, freshly chopped veggies, and chutney, this delicious snack comes together in just 2 minutes. It has a spicy, sour, and slightly sweet taste that is loved by people of all age groups. This instant bhel, made with bhel puri mix namkeen, is easy to prepare using ingredients readily available in your kitchen. Do give it a try!

Tips for Making Delicious Bhel Puri with Bhel Mix Namkeen:
  • Flavorful Bhel Mix: I prepared a special masala mix to give the bhel mix a market-style taste. The bhel mix is made using puffed rice, peanuts, roasted chana dal, chavanu, papdi, sev, and basic spices. You can store it in an airtight container for months.
  • Perfect Green Chutney: Green chutney is easy to prepare, and its consistency should be medium-thick so that it gets absorbed well into the bhel mix. I also made a sugar-water mixture to balance the flavors, eliminating the need for sweet chutney.
  • Serve Immediately: Once the bhel puri is mixed, it should be served immediately to maintain its crispiness and fresh flavors.

Ingredients
 

For bhel mix

  • 200 grm murmura
  • ½ cup oil
  • ½ cup peanuts
  • ½ cup roasted chana dal
  • 10-15 curry leaves
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tbsp roasted cumin powder
  • 1 tsp black salt
  • 1 tbsp chaat masala
  • ½ tsp salt
  • 1 tbsp amchur powder
  • 3 tbsp sugar powder
  • 1 cup chavanu
  • 10-12 papdi puri
  • 1 cup sev

For green chutney

  • 1 cup coriander leaves
  • ¼ cup mint leaves
  • 10-12 curry leaves
  • 1 tsp black salt
  • 4 green chilli
  • 1 inch ginger
  • 1 tbsp roasted chana dal
  • Pinch of salt
  • 1 tsp lemon juice
  • 1 tsp sugar
  • ¼ cup cold water

For sugar mixture

  • 3 tbsp sugar
  • ¼ cup water or as required

For bhel puri

  • 3 cup bhel mix
  • ¼ cup chopped onion
  • ¼ cup chopped cucumber pieces
  • ¼ cup tomatoes piceds
  • ½ cup boiled potatoes
  • ¼ cup finely chopped raw mango
  • ¼ cup pomegranate seeds
  • 3 tbsp green chutney
  • 2 tbsp sugar mixture
  • Some coriander leaves
  • Garnish with sev

Instructions

Making Bhel Mix

  • In a kadai, heat ½ cup oil. Then add ½ cup peanuts and ½ cup roasted chana dal. Fry until slightly golden brown.
  • Next, add some curry leaves and 1 tsp turmeric powder to the oil. Mix well.
  • Now, add 200 grams of murmura and mix well.
  • In a mixing bowl, add 1 tsp red chili powder, 1 tbsp roasted cumin powder, 1 tsp black salt, 1 tbsp chaat masala, ½ tsp salt, 1 tbsp amchur powder, and 3 tbsp powdered sugar. Mix well. The masala mix is ready.
  • Add the masala mix to the murmura and mix well.
  • Then, switch off the gas and add 1 cup chavanu, 10-12 papdi puri pieces, and 1 cup sev. Mix well.
  • Bhel mix is ready. Store it in an airtight container.

Making Green Chutney

  • In a mixer jar, add 1 cup coriander leaves, ¼ cup mint leaves, 10-12 curry leaves, 1 tsp black salt, 4 green chilies, 1-inch ginger, 1 tbsp roasted chana dal, a pinch of salt, 1 tsp lemon juice, 1 tsp sugar, and ¼ cup cold water. Grind well.
  • Green chutney is ready.

Making Sugar Mixture

  • In a bowl, add 3 tbsp sugar and some hot water. Mix well until the sugar is completely dissolved.
  • The sugar mixture is ready.

Making Bhel Puri

  • In a mixing bowl, add 3 cups of bhel mix. Add ¼ cup chopped onions, ¼ cup chopped cucumber, ¼ cup chopped tomatoes, ½ cup boiled potato pieces, ¼ cup chopped raw mango pieces, ¼ cup pomegranate seeds, 3 tbsp green chutney, 2 tbsp sugar mixture, and some coriander leaves. Mix well.
  • Bhel puri is ready. Serve immediately.

Notes

  • Fry peanuts and roasted chana dal until they turn slightly golden brown.
  • Adding turmeric to hot oil gives the perfect color to murmura.
  • Chaat masala adds a tangy taste to the bhel mix.
  • Amchur powder and sugar powder give a tangy-sweet taste to the bhel mix.
  • Do not add the masala mix to the oil.
  • Adding chanavanu, papdi puri, and sev gives the bhel mix a market-style taste.
