The key to making tasty Gujarati bhaidku at home are
- Firstly, bhaidku premix is a combination of four grains i.e small-grain rice, green moong dal, bajra, and jowar. I roast all grain slightly so it will become crispy and easily grind into a coarse flour.
- Store bhaidku premix or flour in an air-tight container for 6-8 months or more in the refrigerator.
- I soak bhaidku flour in a buttermilk and water mixture. Soaking bhaidku flour helps to fasten its cooking process and avoid lumps while cooking the mixture.
