lauki kofta curry is made from grated bottle gourd with tomato and onion-based sauce. This soft kofta is made with grated lauki, gram flour, and spices. I shared an easy method of lauki kofta curry, which can be served with roti or paratha for a complete meal. It is quick, easy to make, and liked by all age groups.

Ingredients
For kofta
- 250 grms grated Lauki - bottle gourd
- ยฝ tsp ginger paste
- 1 tsp green chilli paste
- ยฝ tsp red chilli powder
- ยฝ tsp cumin powder
- ยผ tsp black pepper powder
- ยผ tsp dry mango powder
- Salt to taste
- ยผ cup chopped coriander leaves
- ยฝ cup gram flour
For gravy
- 1 medium size onion
- 2 medium size tomatoes
- 2 green chilli
- 2 tbsp ghee
- 1 bay leaf
- 3 cloves
- ยฝ inch cinnamon
- 2 green cardamoms
- ยฝ tsp ginger paste
- 1 tsp garlic paste
- 1 tsp red chilli powder
- ยฝ tsp turmeric powder
- 1 tsp coriander powder
- ยฝ tsp cumin powder
- Salt to taste
- 1 cup curd
- ยผ cup + ยฝ cup water
- ยฝ tsp garam masala
- 1 tsp kasuri methi
- ยผ cup chopped coriander leaves
Instructions
FOR KOFTA
- peel and grate lauki. add salt and squeeze well.
- Then add ginger-green chili paste, spice and besan. Mix well and prepare round shape kofta.
- Deep fried kofta on medium flame and keep aside
For lauki kofta curry
- In a mixing jar, add tomato, onion and green chili. Grind into a smooth paste.
- Heat ghee in a pan. Add bay leaf, cinnamon, cloves and green cardamom. Sautรฉ for a minute.
- Then add grinded tomato onion paste and cook till oil separates from sides.
- Now add red chilli powder, coriander powder, turmeric powder, cumin powder and salt. Mix well.
- Then add curd and mix well with the gravy.
- Now add leftover lauki water to adjust the consistency of the water.
- Mix well and boil. Add lauki kofta and cover and cook for 8-10 minutes.
- Then add garam masala, kasuri methi and chopped coriander leaves. Mix well.
- Serve lauki kofta curry with roti, paratha, or rice.
Notes
- Salt helps to excess water from lauki and avoid to turns into black.
- Squeezing out all water from lauki helps to make crisp kofta.
- Add kofta at the time of serving.
