shakarpara is the most popular Indian snack also known as shankarpali. It requires very less ingredients and can be prepared at home very easily. Today I share 2 types of shakarpara, one is sweet shakarpara made with flour, ghee, milk, and sugar while another is Khara shakarpara made with flour, oil, and regular spices. It is all time favorite crispy, crunchy and liked by all age groups. It also has a very long shelf life and can be stored in an airtight container for months. I share the perfect ingredient ratio and a few no-fail tips to help you to make perfect sweet and khara shakarpara on the first attempt.

Ingredients
For sweet shakarpara
- 250 grm or 2 cup maida
- ยผ cup milk
- ยฝ cup powder sugar
- ยผ cup melted ghee
- ยฝ tsp of cardamom powder
- Pinch of salt
For khara shakarpara
- 250 grm or 2 cup maida
- 3 tbsp oil
- Salt to taste
- 1.5 tsp white sesame seeds
- 1.5 tsp black sesame seeds
- 1 tsp cumin seeds
- ยฝ sugar
- ยพ cup or water as required
Instructions
Sweet shakarpara
- In a pan, add milk and sugar. Cook on low flame till sugar is dissolve.
- In mixing bowl, add flour, cardamom powder and pinch of salt mix well and make a well in the centre.
- Add hot melted ghee in the centre. crumble and mix until the flour turns moist and holds shape when pressed with the fist.
- Add milk and sugar mixture into dough and knead soft dough.
- further roll it slightly thick like paratha. if you prefer this shakarpara then you can roll thinly.
- cut in square shape, size of your choice.
- Deep fry in hot oil, for 15-20 minutes.
- Stir occasionally keeping the flame on low-medium.
- Fry till the sweet shankarpalli / shankarpara turns golden and crisp.
- Finally, drain over plate and serve store sweet shankarpara in an airtight container once cooled completely.
Khara shakarpara
- In a large mixing bowl add maida, salt, white sesame seeds, black sesame seeds, cumin seeds and sugar. Mix well.
- Make a well in centre, add hot oil in it. mix well oil with flour.
- crumble and mix until the flour turns moist and holds shape when pressed with the fist.
- now add ยพ cup water and knead the dough.
- knead to smooth and tight dough adding water as required.
- grease the dough with 1 tsp oil and rest for 20 minutes.
- knead the dough again making sure its tight and smooth.
- divide the dough into half and roll gently.
- roll to slightly medium thick rectangle shape.
- now cut into diamond shapes with sharp knife or using pizza cutter.
- deep fry in hot oil by dropping one by one.
- keep the flame on medium-low and stir occasionally.
- fry on low flame for 15 to 20 minutes or until the shankarpali turns crisp and flaky.
- drain off the khara shakarpara in zara to remove excess oil.
- finally, enjoy khara shankarpara with tea or store in an airtight container for a month.
Notes
- Melt sugar properly into milk, do not boil milk.
- To make crispy shakarpara, add hot ghee into flour
- Make a soft dough sweet shakarpara.
- Fry sweet shakarpara on low heat.
- Knead stiff and smooth dough of shakarpara.
- Fry shakarpara on medium-low heat.
