Lila Chana Nu Shaak is a traditional Gujarati recipe made using green chana, special green masala and regular Indian spices. It is generally made in winter as green chickpeas are available in abundance during this period. Green Chickpeas are very nutritious and are loaded with protein, vitamins A and c, and calcium. Ingredients
To boil green chana
- 250 grm or 1.5 cup fresh green chana
- 2 cup water
- Salt to taste
- Pinch of sugar
for green masala
- 10-12 boiled palak leaves
- ยผ cup white part of green garlic
- ยผ cup chopped coriander leaves
- 4 green chilli
- 1 inch ginger
- 1.5 tbsp coarse peanut powder
- 1 tbsp coarse white sesame seeds
- Water to grind paste
For green chana shak
- 4 tbsp oil
- ยฝ tsp ajwain
- Pinch of hing
- ยฝ tsp cumin seeds
- 1 bay leaf
- 2 cloves
- 2 dry red chilli
- 1 inch cinnamon
- 1 tsp chopped garlic
- 1 tsp chopped ginger
- Green masala paste
- ยผ tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp cumin powder
- Salt to taste
- Boiled green chana with water
- ยฝ tsp garam masala
- 2 tsp sugar
- ยผ cup chopped coriander leaves
- ยผ cup chopped green garlic
- 1 tsp lemon juice
Instructions
- In a pan, boil 2 cup water and add fresh green chana, salt, and sugar. Boil green chana till it becomes soft.
- Now boil 10-12 palak leaves with some water for 2 minutes. When palak leaves are boiled add it into cold water.
- In a mixture jar, add boiled palak leaves, the white part of green garlic, chopped coriander leaves, green chilli, ginger, peanuts, and sesame seeds. Add little water and grind it into a smooth paste. Green masala paste is ready.
- Heat oil in pan; add ajwain, hing, cumin seeds, dry red chilli, bay leaf, cloves, and cinnamon. Sautรฉ it.
- Then add chopped garlic and ginger. Sautรฉ till it is slightly golden brown.
- Add the green masala paste and cook till oil separates from it.
- Then add turmeric powder, coriander powder, cumin powder, and salt. Mix well.
- Add boiled green chana with water. Mix well.
- Cover and cook green chana with gravy till oil separates from its sides.
- Then add garam masala, sugar, coriander leaves, and a green part of green garlic. Mix well.
- Switch off the flame and add lemon juice. Mix well
- Serve lila chana nu shak with puri or paratha and salad.
Notes
- add sugar while boiling green chana helps to retain its green color.
- cover and cook green chana with gravy, so gravy flavors easily absorb in green chana.
- sugar gives a nice flavor to shaak.
