Dahi Phulki is a popular savory dish in the city of Delhi. It is made of gram flour dumplings dipped in a spicy yogurt dip. It is very light & refreshing. It is prepared very easily as this recipe doesn’t involve soaking & grinding of Dal as we do for Dahi Vada. Today, I am going to share two ways of serving this- One is Dahi Phulki with tempering & another one is sweet Dahi Phulki Chaat. It tastes wonderful both ways. Dahi Phulki with tempering tastes amazing with rice or Biryani. It is a quick recipe and is loved by all kinds of age groups. Do try this!

Dahi phulki chat | how to make dahi phulki chat | 2 ways dahi phulki chat
Ingredients
For phulki
- 1 cup gram flour
- Salt to taste
- ยฝ tsp red chilli powder
- ยฝ tsp cumin powder
- 2 chopped green chilli
- ยผ cup coriander leaves
- ยผ tsp baking soda
- ยฝ cup water
For dahi
- 2.5 cup dahi
- ยฝ tsp salt
- ยฝ tsp black salt
- 1 tbsp sugar
- 1 cup water
For tadka dahi phulki toppings
- 1 tsp oil
- ยฝ tsp cumin seeds
- Pinch of hing
- 2 dry red chilli
- Chilli flakes
- Cumin powder
- Coriander leaves
For sweet dahi phulki toppings
- Tamarind chutney
- Green chutney
- Chat masala
- Black salt
- Cumin powder
- Red chilli powder
- Sev
Instructions
Making phulki and dahi
- In a mixing bowl, add gram flour, salt, red chilli powder, cumin powder, green chilli, coriander leaves and baking soda. Mix well.
- Add water gradually and make a thick and flowing batter of phulki.
- Now, whisk the batter in one direction so air particles incorporate into the batter.
- Heat oil in a pan, drop small balls of pulk one by one to medium hot oil.
- Keep the flame medium and stir occasionally.
- Fry the phulki till they turn golden brown.
- Now in a mixing bowl, add dahi (yogurt), salt, black salt and sugar. Then add 1 cup of water and Mix well.
- .Add hot and fried phulki into dahi mixture. ย Mix them in the curd. Cover it and keep it aside to set for at-least minutes.
Make tempered dahi phulki
- In a bowl, add dahi and soaked phulki.
- Sprinkle some red chilli flakes, cumin powder and coriander leaves.
- Heat oil in a pan, add cumin seeds, hing and dry red chilli. Mix well and add tempering on dahi phulki.
- Serve with some chopped tomato pieces and onion rings.
Make sweet dahi phulki
- In a bowl, add dahi and soaked phulki.
- Now add some tamarind chutney, green chutney chat masala, black salt, cumin powder, red chilli powder and coriander leaves.
- Then topped phulki with some sev and serve.
Notes
- whisk phulki batter for 3-4 minutes so air particles incorporate in it.
- fry phulki on medium flame.
- add water into dahi so phulki easily absorbs it.
- soak slightly hot phulki into dahi.
