It is a tangy and sweet chutneys prepared from raw or unripe mango which is typically eaten as a side dish. I share 4 types or raw mango chutneys which are gud mango chutney, raw mango garlic chutney, mango onion chutney and raw mango green chutney. All three chutneys are different in taste and texture. So with a few basic ingredients try out a tasty and mouthwatering raw mango chutney recipe.

Ingredients
For gud mango chutney
- 1 medium size of 250 grm raw mango
- ยฝ tsp cumin seeds
- Salt as per taste
- ยผ tsp asafetida
- 2 tsp kashmiri red chilli powder
- ยฝ cup jaggery
For Raw mango garlic chutney
- 1 or 250 grm raw mango
- 8-9 garlic cloves
- 1 tsp cumin seeds
- Salt to taste
- 4 tbsp jaggery or as per taste
For raw mango green chutney
- ยฝ cup raw mango pieces
- 3 cup coriander leaves
- 1 cup mint leaves
- 3-4 green chilli
- 1 inch ginger
- Salt to taste
- ยผ tsp hing
- 1 tsp jeera
- 1 tsp fennel seeds
- 3-4 ice cubes
For mango-onion chutney
- 1 or 250 grm raw mango
- 2 chopped onion
- 2 dry red chilli
- Salt to taste
- 1 tsp cumin seeds
- ยผ cup chopped coriander leaves
- 1 tbsp sugar
Instructions
Making gud mango chutney
- In a mixture jar, add roughly chopped raw mango pieces, cumin seeds, salt, asafetida and red chilli powder. Grind it.
- Add jaggery into a mixture jar and grind it into a smooth paste
- Gud mango chutney is ready.
Making Raw mango garlic chutney
- In a mixture jar, add small size raw mango pieces, garlic cloves, cumin seeds and salt. Grind it into a coarse mixture.
- Take out into mixing bowl, add jaggery and mix well. Rest for 15 minutes.
- Raw mango garlic chutney is ready.
Making raw mango green chutney
- In a mixture jar, add raw mango pieces, coriander leaves, mint leaves, green chilli, ginger, salt, hing, jeera, fennel seeds and some ice cubes.
- Grind it into paste.
- Serve raw mango green chutney.
Making mango-onion chutney
- In a mixture jar, add small size raw mango pieces, onion pieces and dry red chilli.ย Grind it into coarse mixture.
- Take out into mixing bowl; add salt, sugar and cumin powder. mix well.
- Mango onion chutney is ready.
Notes
- Gud wali chutney: do not add any water while grinding the chutney.
- Raw mango garlic chutney: grind chutney mixture on pluses.
- Green chutney: use ice cubes or cold water to grind the chutney.
- Mango Onion chutney: do not add salt while grinding chutney.
